teaspoon vegetable oil
(16-ounce) package JENNIE-O® Lean Ground Turkey
tablespoon chili powder
cloves garlic, minced
(14-ounce) can corn kernels, drained
(15-ounce) can cannellini beans, drained and rinsed
cup chicken broth
(7-ounce) can chipotle peppers in adobo sauce, chopped, plus 1 teaspoon sauce
cup chopped fresh cilantro
In large skillet, heat oil over medium-high heat. Add ground turkey, chili powder and garlic.
Spray a skillet with nonstick cooking spray. Preheat skillet over medium-high heat.
Add ground turkey to hot skillet. Stir to crumble, approximately 14 to 16 minutes. Always cook to well-done, 165°F. as measured by a meat thermometer.
Add corn, beans, broth, chipotle peppers and adobo sauce. Reduce heat to medium-low.
Simmer uncovered 15 to 20 mintues or until thickened, stirring occasionally. Stir in cilantro.
